More from my trip to Palma Mallorca - this is Lomo Con Col - a traditional Mallorquinas dish made with pork, sobrassada, botifarró, apricot and wrapped up in a cabbage leaf to braise. Delicious, this traditional dish is a good example of the 'fusion' cuisine in Mallorca, with influences from Roman, Venetian, Arabic, Catalonian and Spanish cuisines. We actually learnt how to make this dish ourselves at Chefs(in).
