Take a look into the fire-pit!!!! The pretty seaside fishing village of #Arbroath is famous for two things. Firstly for the #ArbroathSmokie - a PGI delicacy made from hot smoked Haddock fillets. Originating from Auchmithie, a small fishing village a few miles north of Arbroath, which was once populated with fishing people of Scandinavian origin. The fishwives originally smoked the fish in halved barrels with fires underneath, trapping the smoke under layers of hessian sacking. At the start of the 20th century, the first Auchmithie fisher-folk began moving to Arbroath, and the process soon became known as the Arbroath Smokie, as we know it today. The Arbroath Smokie has been officially recognised at the highest levels in Europe and has official protection through the Protected Geographical Indication, like Parma Ham, Parmesan and Champagne. Apparently, even when we leave the EU that protection will remain! Here you can see the haddock neatly tied in pairs of fillets and suspended over wooden beams, with the firepit below. They are then covered with hessian soaked in water and left to smoke. Delicious served just as they come the smoked fish has a sweet taste and flakes into beautiful morsels. Abroath is also home to Arbroath Abbey, founded in 1178 by William the Lion. It has a special place in Scottish history because of the Declaration of Arbroath of 1320, which asserted Scotland's independence from England.
