A delicious take on Burrata @villa_di_geggiano the other night as the first course in our meal where the soft, Italian cheese was served on the lightest courgette and mint sauce with morsels of crisp croutons to add texture. Burrata literally means buttered and it is a fresh cheese made from a mix of mozzarella and cream. The outside thin shell is a mozzarella while the insides contain a soft, doughy, stringy, mixture of curd and fresh cream.
